Yummy Toes

Emmett has been trying to do this for a couple weeks now and he finally succeeded last night. He was very pleased with himself and has been stuffing those toes in his mouth every time they aren't covered by socks or a sleeper.

3 Month Pro Pics

We didn't get great newborn photos, and decided it was really important to us to have nice photos of Emmett's first year. He is growing and changing so fast. We ended up getting a first year package through a local photographer that will include 3, 6, 9, and 12 month shoots. Here are the 3 month photos from March!

Look What I Can Do!!

Emmett has learned to sit all by himself. He's gotten even better at it since I snapped these pictures a couple days ago. He doesn't even have to prop himself with his hands anymore. I'm so proud of him!

I love all of these rolls, and those cheeks!

4 months old!

Emmett turned 4 months old on April 7th. My baby is growing up so fast! He is rolling everywhere, babbling, laughing, smiling, playing with anything he can get his hands on, and learning new things every day. At his 4 month appointment he weighed in at 16 lbs 6 oz and was 26 inches long. He's growing like a weed!

These are from a walk we took the same day. Emmett loves being outside and fusses when you take him back inside.

Easter Morning

I didn't really think Emmett would even notice his Easter basket, but he actually got excited checking it out!

We blew up the super cool pool the Easter Bunny brought him. Can't wait until summer so we can try it out for real!

Easter, Round 1

We celebrated Easter with my family on Saturday. It was also my niece's 2nd Birthday.

Here is Emmett waiting to get the party started(he wasn't dressed yet). These are his cousins Birthday balloons.

Opening baskets from Grandma

He wasn't sure what to think of the bee toy. He eventually had a full out meltdown over it!

Emmett took a nap in his swing while we colored eggs. Serenity made a big, huge mess. :)

Creme Brûlée French Toast

I made this Saturday evening so we could have it for breakfast Easter morning. I thought it was really good, but Justin wasn't crazy about the creme brûlée flavor. I will probably try a different recipe next time I try overnight french toast, but this one certainly is yummy!

1/2 cup butter
1 cup packed brown sugar
2 Tbsp corn syrup
1 loaf Texas Toast bread
5 eggs
1 1/2 cups half-and-half cream
1/4 teaspoon salt
1 teaspoon vanilla
Dash of cinnamon

In a small saucepan melt butter, brown sugar, and corn syrup over medium heat until smooth, stirring occasionally. Pour mixture onto large, greased jelly roll pan (18x13x1"). Spread around to cover surface. Place 12 slices of bread in a single layer to cover pan. Mix together eggs, cream, salt, vanilla, and cinnamon. Spoon mixture over each piece of bread. Cover and refrigerate overnight. Bake uncovered at 350 degrees for about 25-30 minutes. Remove from pan and serve. If not serving immediately, turn each slice of bread over (this will prevent bread from sticking to the bottom of the pan).

I have tons of pictures from the Easter weekend festivities that I will hopefully post tomorrow. :)

Bunny Bait

This was a super easy, addicting snack to make!

1 bag tender white popcorn
6 oz. white chocolate candy coating
1 bag Easter M&Ms
pretzel sticks, broken into small pieces

Put popped popcorn in a large bowl with the M&Ms and pretzel pieces. Melt white chocolate in microwave, stirring every 30 seconds. Drizzle white chocolate over popcorn mixture and stir to coat, making sure to get all of the pretzel pieces and M&Ms that sunk to the bottom. Lay out on wax paper to cool. Break into pieces after it has cooled.
